Christmas Turkey
Ingredients:
1 pinch of seasoning
1 turkey of 7 kilos
2 lemons
2 cups onion minced
¼ cup vinegar
3 tablespoons of oil
12 garlic cloves
4 chives, chopped
1 garlicporro or large leek, minced
2 bay leaves
3 tablespoons of salt
3 tablespoons English sauce
1 teaspoon ground pepper
2 sprigs of thyme
3 sage leaves
1 branch of parsley
1 cup of dry white wine
3 teaspoons brandy
2 units of apples peeled and cut without the core
½ cup of water (120 milliliters)
1 teaspoon of sugar
1 teaspoon ground pepper
Preparation:
Cut off the head and prepare the marinade for the baked turkey. To do this, mash the onion with the vinegar, the oil and the previously peeled garlic cloves. Once integrated, place the dressing in an oven safe container.
Now, in that same container, add the chives, the garlic porro, the salt, the chopped lemons, the bay leaf, the Worcestershire sauce, the pepper, the thyme, the sage, the parsley, the wine and the brandy, and mix everything well. (without crushing) to finish making the home-baked turkey marinade. Next, stir in the turkey and rub the dressing inside and out. To introduce the liquid, you can use a syringe without a needle.
Leave the turkey in the fridge for 3-4 hours to soak up the aromas and turn it occasionally. Preheat the oven to 175 ºC and, after the time, cover the tray where you have it with aluminum foil and cook the roasted turkey in the oven for about an hour and a half, or until it is golden brown.
Remove the Christmas Baked Turkey, flip it over, re-cover the bowl with aluminum foil and bake for another 30 minutes. Repeat this same operation once that time has passed. You should repeat it until the turkey has been in the oven for a total of three and a half hours.
At that time, remove the juicy baked turkey, remove the herbs from the tray, and strain the remaining juice into the container to make another sauce with the remaining ingredients. Reserve this liquid obtained from cooking the turkey in the oven in a separate container.
Take a pot and add the pulp of the chopped apples and half a cup of water. Heat over medium heat and simmer for 10 minutes until soft.
Then, mash the apples together with the liquid that you reserved from cooking the roast turkey in the oven and transfer the mixture to another pot. Add the sugar and pepper and let it boil together for three minutes. When done, serve this baked turkey sauce in a separate bowl.
